Dhakal's exceptional talent and dedication quickly caught the attention of industry experts, including Agung Prabowo, a highly acclaimed bartender and operator. Dhakal had the privilege of serving as the 'Liquid Chef' at The Old Man, a prestigious bar that garnered numerous accolades. In 2019, The Old Man was ranked as the top bar on Asia's 50 Best Bars list and secured the 9th spot on the World's 50 Best Bars list.
In October 2020, Dhakal embraced a new role as the beverage director at Penicillin, Agung Prabowo's latest venture. Penicillin stands as a sustainable venue that encompasses a bar, kitchen, lab, and fermentation room, all with a strong focus on recycling and upcycling ingredients. Dhakal's background in engineering allows him to incorporate his skills and knowledge into this innovative and environmentally-conscious approach.
